Columbia River Wineries with Tom Douglas
An Evening of Northwest-Style Food and Wine

| Located on approximately
the same latitude (46° N) as some of the great French
wines regions of Bordeaux and Burgundy, Washington State wine
regions produce more wine grapes than any other state in the
U.S., except California. Wine grapes are now the fourth most
important fruit crop in Washington State behind apples, cherries
and pears.
A variety of climates and soils, along with the long summer
sunlight hours of northern latitudes, create prime growing
regions, predominantly in the valleys and on the hillsides
of areas east of the Cascade Mountain range. Canopies can
be controlled by irrigation management and grapes can fully
ripen, developing complex fruit flavors, good acid levels
and pleasing aromatics. Two appellations in the Wenatchee
area benefit from the huge "rain shadow" effect
created by the Cascade Mountains - the North-Central Washington
region (often referred to as the Columbia Cascade region)
and the Lake Chelan region. Vineyards on the east side of
the Cascades grow 99% of Washington wine grapes.
The blue waters of the Columbia River flow
through Central Washington in an arc that pushes against the
foothills of the Cascade Mountains, creating a unique climate
along the western edge of the rain shadow created by the Cascades.
Here, in engineering feats of steel and concrete, humans have
created river crossings that bring together the two sides
of the river. Dotting the hills and vales between these crossings
are the vineyards and wineries of the Columbia River Wine
Region. The wine trail that connects these wineries traverses
some of the most spectacular country in Washington, whre vast
Ice Age floods carved huge coulees, sheer basalt cliffs, and
deposited soil on benches and eddies.
This geologic wonderment is the character of the wines of
the Columbia River. Here, grape growers nurture intense fruit
from carefully tended vineyards. These grapes, as a reflection
of the environment, terroir, are the key to these
wonderful wines. This fruit, in the hands of individuals passionate
about coaxing the best from the vine to the cellar, sets the
stage for the creation of Columbia River Wines. These winemakers
are committed to creating wines of distinction from rolling
acres of family vineyards, where the grapes and the progeny
of the soil are the key to Award-Winning wines. |

Tom Douglas is one of the Pacific
Northwest's most widely recognized chefs and best-loved food personalities
and recent recipient of Bon Appetit’s Restaurateur of the
Year award. Tom's passion for using only the best and freshest local
ingredients, his enthusiasm, and his boundless creativity have helped
put their five restaurants, Dahlia Lounge, Etta's, Palace Kitchen,
Lola, and Serious Pie, on the national culinary map. Over the course
of more than 20 years, Tom has been featured by the media as the
Seattle chef who has helped to define the Northwest Style. Tom’s
creativity with local ingredients and his respect for Seattle’s
ethnic traditions have helped him win numerous awards and accolades
including the James Beard Award for Best Northwest Chef in 1994.
Tom’s love of food continues to evolve beyond the restaurant
scene. He is the author of three cookbooks: Tom Douglas’
Seattle Kitchen, which won a James Beard award for Best Americana
Cookbook, Tom’s Big Dinners, and I Love Crab
Cakes. In addition, Tom’s specialty food line, which
includes Rub with Love spice rubs plus barbecue and teriyaki
sauces, is sold nationwide. Tom also hosts his own weekly talk radio
show, Tom Douglas’ Seattle Kitchen, on 710 KIRO.

bountiful crops of Cabernet Sauvignon, Merlot, Syrah, Riesling and
Chardonnay grapes grown under the Eastern Washington sun. Using

Cave B Estate Winery: The winemaking philosophy shared by the winemaker is one of natural, minimal-interventionist production. Cave B and SageCliffe wines are made without the use of enzymes, and no addition of sugar (chaptalization) or acid (acidulation) is ever employed in the winemaking process. The wines are made from only the grapes themselves, along with yeast cultures and nutrients. The purity of the wine produced is the winery's hallmark and it is precisely this element which maximizes the expression of the SageCliffe terroir. Cave B Estate Winery bottles its wine under two premium labels: CAVE B and SAGECLIFFE. The grapes for each are cultivated in the 30 Cave B Estate Vineyards, yet through careful grape selection and specialized winemaking techniques, the same varietals are made uniquely distinct, common only in their award-winning character.

Bella
Terrazza Vineyards: Surrounded by picturesque North
Central Washington beauty, our estate vineyard is rooted in ideal
vineyard soils on a south, southwest-facing terrace perched above
the pristine waters of the Wenatchee River in the Sleepy Hollow
area. The name "Bella Terrazza," Italian for "Beautiful
Terrace," is at the heart of what makes our beautiful vineyard
so unique. Our naturally contoured terraces couple with several
unique micro climates which allows us to produce crisp, refreshing
white wines as well as profound, intense red wines. At Bella Terrazza,
our wines are made of people, memories, commitment, dedication and
passion. Wine is the people who make it and the people who enjoy
it.
White
Heron Cellars: White Heron Cellars, owned by vintners
Phyllis and Cameron Fries, is located in the middle of our vineyard
property in the ghost town of Trinidad, between Quincy and Wenatchee,
above the Columbia River in Washington State. The winery started
making wine in 1986 with a Washington State Pinot Noir. Current
vintages are made with grapes from our own vineyards and from selected
Columbia Valley growers. Each wine is unique in style and creates
its own niche in the wine world. The vineyard and winery site overlooks
the Columbia River, Crescent Bar Resort, and the foothills of the
Cascade Mountains. Deep well-drained soils, southern slopes, excellent
air drainage, and a ring of hills surrounding the site, make for
an exceptional vineyard location. The first vines were planted in
1991. Varieties grown include Cabernet Sauvignon, Cabernet Franc,
Malbec, Petit Verdot, Pinot Noir, Gamy, Syrah, Rousanne and Viognier.
